Ingredients
- 2 tablespoons olive oil or unsalted butter
- 1 medium yellow onion, diced (about 1 cup)

- 3 garlic cloves, minced
- 8 cups low-sodium chicken broth (homemade or store-bought)
- 1 cup water (optional, for adjusting intensity)
- 1 pound boneless skinless chicken thighs or breasts
- 2 bay leaves
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- 1/2 teaspoon dried rosemary, crushed slightly (optional)
- Salt and freshly ground black pepper, to taste
- 6 ounces wide egg noodles (about 2 cups)
- 2 tablespoons chopped fresh parsley, plus more for garnish
- 1 tablespoon fresh lemon juice (optional, brightens the soup)

Method
1. Sweat the aromatics
Heat the olive oil or butter in a large pot over medium heat. Add the diced onion, carrots, and celery. Season lightly with salt and cook, stirring occasionally, until the onion is translucent and the carrots begin to soften, about 6–8 minutes. Add the garlic and cook 30–60 seconds until fragrant.
2. Add broth and chicken

3. Simmer gently

4. Shred the chicken
Remove the chicken to a cutting board. Use two forks to shred it into bite-size pieces. Discard any bones if using bone-in chicken, and remove bay leaves from the pot.
5. Cook the noodles
Bring the broth back to a simmer. Add the egg noodles and cook according to package directions until tender, usually 6–8 minutes. If you expect leftovers, undercook noodles by 1 minute to avoid them getting mushy when stored.
6. Finish the soup
Return the shredded chicken to the pot. Stir in the chopped parsley and lemon juice if using. Taste and adjust seasoning with salt and pepper. Remove from heat and serve hot.
